Thursday just goes to show how important it is to count BEFORE you eat! I told DH that I didn't want any ice cream
when we took the kids for a treat. He got me some anyway, knowing how much I love DQ Blizzards. While I was strong
enough to not order one, I wasn't strong enough to resist what was sitting in front of me. My next mistake was to eat
a sausage, egg and cheese biscuit before knowing how many points they were. It would not be that big a deal since I
have Flexpoints left. However, I do have a party on Saturday which will be difficult to resist the grazing of the buffet.
My advice of the week is: Write it before you bite it!

So much has gone on with Hurricane Katrina and Rita right on her heels. Although I don't live in Louisiana now,
I did as a young child. It was a difficult time for our nation. I have decided to continue posting in the hopes
that it will inspire others (and myself). This is worth the extra effort!

Chicken and Stuffing

1 pound chicken breast, cooked, skinless 1
package cornbread stuffing dry mix 21 oz Campbell's (U.S.) 98% Fat-Free Cream Of Mushroom Soup 1 1/2 cup water
1. Layer chicken in the bottom of sprayed casserole dish. 2. Spread soup on top of chicken. 3. Add hot water to stuffing
mix and toss. 4. Add to casserole, spreading evenly. 5. Cook in 350 degree oven until bubbly.
