I gained 5.6 lbs. in the last 3 weeks.  I hate to have to publish that here but I created this web site to show an honest representation of my weight loss.  Today is a new day and so far, so good.  I don't want to feel like I did yesterday.

Mini Turkey Loaves

Ingredients
1 pound lean ground turkey
1 package cornbread stuffing dry mix
2 items egg white(s)
1 cup water
1 envelope onion soup, dry mix

Instructions

1. Preheat oven to 350 degrees.
2. Combine all ingredients.
3. Divide evenly into muffin tins.
4. Bake for 35-40 minutes.
(Note:  Everyone seemed to really like these.  My 6YO ate 2, my DH ate 5 and the next morning, my 9YO was disappointed that I was taking the last 2 for my lunch.)

Low Fat Lasagna

main meals | I serve this with light bread spread with Brummel & Brown yogurt spread and garlic salt, toasted in the toaster oven.

Ingredients
12 items dry lasagna noodles
26 1/2 oz bottled spaghetti sauce
16 oz Morning Glory Low-Fat Cottage Cheese
1 pound uncooked ground turkey breast
1 Tbsp dried parsley
1 tsp ground oregano
8 oz part-skim mozzarella cheese

Instructions

1. Ground turkey meat in a saucepan. Season to taste.
2. Add spaghetti sauce and simmer until warm.
3. Mix herbs into cottage cheese.
4. Layer meat sauce, cottage cheese and 3 noodles.
5. Repeat this once.
6. On the last layer, place cottage cheese directly on noddles.
7. Pour the last of the meat sauce over the entire dish.
8. Put mozzerella cheese on top.
9. Bake in a 250 degree oven until cheese is melted and bubbly.

Cheesy Pork Loin Chops and Potatoes

INSTRUCTIONS
7 3/4 oz dry mix scalloped potatoes
2/3 cup 1% low-fat milk
4 cup water
5 chop Market Day Bone-In Pork Chop
1. Mix scalloped potato mixes, water and milk in Crock Pot.
2. Season chops and desired and place on top of potato mixture.
3. Cook on low for 8 hours.
